Chocolate Chip Cookies (Butter Free!)

2 1/4 c all-purpose flour
1 tsp salt
1 tsp baking soda
1/4 cup mild EVOO
3 tbsp Butter EVOO
1 1/2 cup granulated sugar
¼ tsp molasses
2 eggs
Chocolate chips to taste

Preheat the oven to 375 degrees F.

Combine flour, salt and baking soda in a bowl. Add sugar,  molasses, vanilla, and olive oil. Beat in eggs.

Roll dough into balls and place on baking sheet.

Bake for 10-12 minutes, until lightly golden and set.

These cookies remain nice and chewy for days after baking!
